WHAT I EAT IN A DAY ? Vegan Summer Meals + A Day In My Life!

MY ETHICAL & VEGAN APPAREL:

BREAKFAST: Soaked Vanilla Oats
– 3/4 cup oats
– 2 tbsp chia seeds
– 1 cup soy milk
– splash of vanilla essence
(soaked for a minimum of 30 minutes)
topped with:
– 1 heaped tbsp coconut yoghurt
– 1 passionfruit
– 1/2 a mango
– 1 yellow nectarine

LUNCH: Rice Paper Rolls
– 5 sheets of rice paper, dipped into boiling water
– 1/3 block of Chickpea Tempeh, cut into 5 pieces and fried in olive oil and salt
– greens (as desired)
– 1/2 an avocado, thinly sliced
– tahini, lime and coriander dressing (recipe coming in a YouTube video soon, until then I recommend this recipe:

DINNER: Summer BBQ Jackfruit Nachos (serves two)
– corn chips (as desired)
– 1 sweet potato, cut into discs and roasted with salt, garlic and paprika
– home-made mango salsa (recipe below)
– home-made guacamole (recipe below)
– Amazonia Smoky BBQ Tender Jack (*)
– charred corn
– fresh rocket
– spring onion
– cashew parmesan

Mango Salsa:
– 1/2 a mango, diced
– 8-10 cherry tomatoes, diced
– 1 small handful of spring onion, sliced
– 1 tsp apple cider vinegar
– pinch of sea salt
– pinch of garlic powder
(tossed with your hands)

Guacamole:
– 1 avocado
– pinch of salt
– pinch of pepper
– pinch of garlic
(mashed until well combined)
