WEEKLY WW FREESTYLE MEAL PREP | FRENCH ONION MEATBALLS, BREAKFAST QUESADILLAS, & SHRIMP FAJITAS

B R E A K F A S T
/ Ham, Egg, & Cheese Quesadilla/
Made 4 quesadilla wraps and 1 wrap is 2 SP!

What you need:
– 4 carb counter wraps
– 7 eggs
– 3oz 98% fat free ham steak
– 1 cup fat free shredded cheddar cheese
– salt and pepper and everything but the bagel seasoning

How to make:
Step1 – season your eggs ans scramble in skillet, next cut up your ham into small dices and also cook in skillet just to warm up, then add eggs into your wrap, next ham, then last cheese.

Step2 – fold over your wrap in half, and spray on top. Bake on 400 for 8 minutes then flip wrap over and spray the bottom of wrap so each side gets crispy and cook additional 8 minutes.

/ Shrimp Fajita Bowl/
Makes 4 bowls and each bowl is 2 SP ( avocado not included in sp)

What you need:
– 1 lb shrimp, peeled
– mulit color baby peppers
– 1 packet of fajita dry seasoning
– 1/4 cup brown rice per bowl
– 1 tsp corn starch
– tri color coleslaw mix
– 3 tbsp sams choice cilantro lime vingerette dressing
Optional toppings – lettuce, salsa, and avocado

How to make:
Step1 – Wash, clean, and peel your shrimp.

Step2- Then spray your skillet with olive oil spray add in your peppers with half of your fajita mix with a splash of water and cook your peppers until soft. Once peppers are done take out and set aside.

Step3- Now toss in 1/2 package of fajita mix in bowl with the shrimp then add to skillet also add your 1 tsp of corn starch and cook your shrimp. Once shrimp is cooked take out of skillet and place aside.

Step4- In a bowl mix your slaw and 3 tbsp cilantro lime dressing together until slaw is coated well.

Step5 – Assemble your bowls add 1/4 cup rice, shrimp, peppers, and slaw. Optional serve with salsa and avocado.

D I N N E R
/ French Onion Turkey Meatballs/
Makes 19 meatballs and 1 meatball is 1SP

What you need:
– 20 oz 97 3 lean ground turkey
– 1 white onion
– 1 cup fat free shredded mozzarella
– 3 tbsp & 1/2 cup of beef broth
– 2 tbsp of white flour ( 1 tbsp for meat mixture) and ( 1 tbsp for gravy)
– salt + pepper,  garlic + onion powder, and dried Italian seasoning

How to make:
Step1 – In a bowl add your ground turkey, seasonings, and 1 tbsp flour to help keep balls together. Mix together with hands and form your turkey balls.

Step2- Next in a skillet spray with olive oil spray , add your onions you have sliced thin with 3 tbsp beef broth and let cook until soft then remove once soft.

Step3- Add your meatballs into the same skillet and let meatballs brown amd cook on each side. Then take out of the pan and set aside.

Step4- Add your onions back into the pan, add your 1 tbsp of flour onto the onions, last add 1/2 cup of broth and let simmer for a minute continuing whisking together until thick with no chunks. Optional for thinner gravy add 1 tbsp of water.

Step5- Add your onions and gravy into a casserole dish I used 7 x 11 dish, then place meatballs on top, now add your 1 cup fat free shredded cheese, and top with black pepper + salt, and dried italian. Bake on 400 for 15-20 minutes.
