[RECIPE BELOW] KFC Inspired Chicken Thighs
Cravin KFC? These thighs are juicy, beautifully spiced and easy to make. A perfect meal for 4.

INGREDIENTS:
– 8 Chicken Thighs, skin on
– 1 & 1/2 cups (150g) Almond Flour
– 1/4 tsp Pepper
– 1/2 & 1/4 tsp Dried Ginger
– 1/2 & 1/4 tsp Dried Parsley
– 1 tsp Paprika
– 1/2 tsp Chilli Powder
– 1/2 & 1/4 tsp Dried Sage
– 1/2 tsp Mustard Powder
– 1/4 tsp Chinese Five Spice
– 1/2 & 1/4 tsp Dried Basil
– Salt, to taste
METHOD:
1.Preheat the oven to 180c/350f. Prepare a large casserole dish by adding enough coconut oil to create a thin layer of oil. Place the dish in the oven whilst it preheats to melt the coconut oil.
2. In a large bowl, mix ALL ingredients except the chicken thighs. Transfer the breading mixture to a large kitchen bag.
3.One by one, add a chicken thigh. Close the bag. Rub and shake the mixture all over the thigh. Remove the thigh and set aside. Repeat for all 8 thighs.
4.Remove the casserole dish from the oven and place all of the thighs, skin side up, in the dish. If any of the areas are mixing some breading mixture, use some of the left over mixture to coat them.
5.Cook in the oven for 25 minutes. Remove and flip all of the thighs so that the skin side is down. Pat mixture onto any areas that don’t have any.
6.Place back in the oven for 20 minutes. Enjoy!
