Healthy Low Carb High Protein Greek Chicken Tray Bake Recipe – Gym & Fitness Nutrition

Greek Chicken Tray Bake.

Simple recipe for a quick & delicious low carb, high protein meal, perfect for after the gym, your workout.

Ingredients

CHICKEN

1 tbsp olive oil

2 tbsp balsamic vinegar

1 tsp smoked paprika

2 tsp oregano

3 cloves of garlic, chopped

½ tsp salt

2 tsp honey

1 red onion, chopped

500g chicken breast, (chopped up chunky)

200g cherry tomatoes

1 green pepper, (chopped up chunky)

1 red pepper, (chopped up chunky)

1 yellow pepper, (chopped up chunky)

100g black or green olives

50g feta (cut into cubes)

Slices of lemon to garnish

Cooking Instructions

Step 1: Preheat the oven to 180 degrees Celsius for 10mins

Step 2: Place the olive oil, balsamic vinegar, paprika, oregano, garlic, salt and honey into a glass bowl & Stir.

Step 3: Cut the peppers & chicken breasts chunky, chop the red onion, then place all with the cherry tomatoes on a baking tray.

Step 4: Pour the sauce you made earlier over the chicken & veg, give a good mix and put the baking tray into the oven and roast for around 25 minutes.

Step 5: Remove from the oven and add the olives of your choice, feta cheese and slices of lemon to the tray and place back into the oven and roast for a further 10 minutes.

Step 6: Once all is ready place on a plate with a side salad then enjoy your Greek Chicken Tray Bake. ☺
