RECIPES
Breakfast – waffles:
1/2 cup almond flour
3/4 cup bobs red mill GF flour
1 tsp baking powder
cinnamon, to taste
1 tsp vanilla extract
1 cup almond milk
1 ripe banana, mashed
2 tbsp chia seeds

Lunch – Macaroni Salad:
1/2 cup cashews, soaked for a few hours
1/2 cup water
1/2 lemon, juiced
Nutritional yeast, to taste
Salt, to taste
1 tbsp yellow mustard
1 tbsp dijon mustard
1 tbsp fresh dill
1 tbsp maple syrup
Salad add-ins – red onion, spinach, capsicum, fresh dill.

Dinner – Enchiladas:
8 corn tortillas
1-2 packets of red enchilada sauce
1 can of black beans, rinsed
Spices – cumin, paprika, mixed herbs, nutritional yeast, salt and pepper
Spinach
Lemon juice
Vegan cheese, for topping
Avocado, for topping
– I baked them at 200 degrees Celsius for 20 minutes. Was really yum!

Snack – Choc Maca Bites:
1 cup almond flour
1/4 cup cacao powder plus more if needed
1/4 cup rice malt syrup + 1-2 tbsp maple syrup depending on sweetness
Salt, to taste
6 soft medjool dates, pitted
2-3 tsp maca powder

Snack – Mini Pizzas:
1 packet of Simple Mills Almond Flour Pizza Dough
6 tbsp water
1 tbsp oil, optional
1 tbsp apple cider vinegar
1 tomato, sliced
Vegan cheese
3 small mushrooms, sliced
