VEGAN SPINACH PESTO + THAI FRIED QUINOA || COOKING WITH CHRISTINA – Quick And Easy Meal Preps

RECIPES:

VEGAN SPINACH PESTO
1 box of rotini
1/2 bag of spinach
1/4 cup of toasted nuts
2 tbsp of fresh lemon juice
1-2 grated lemon peel
1/3 cup of olive oil
1/3 cup of nutritional yeast
– Cook pasta according to box
– Combine spinach, nuts, nutritional yeast, lemon juice and peels into a blender or food processor and lightly pulse
– Add oil in gradually until creamy
– Pour over pasta and enjoy

THAI FRIED QUINOA
1/2 cup quinoa
1/2 cup coconut milk
1/2 cup vegetable broth
1/3 chopped green onions
1 tbsp minced ginger
2 tsp minced garlic
1 cup of peas
1 tbsp lime juice
1 tbsp coconut aminos
1/2 cup tofu scramble
– In a saucepan over medium high, add quinoa and toast for 1-2 minutes
– Combine coconut milk and vegetable broth and add to quinoa, let simmer for 40 minutes or until there is no liquid left
– In a large skillet over medium heat sauté garlic and ginger and add tofu and veggies and cook for 5-10 minutes
– Once veggies are tender, add in quinoa, lime juice, and coconut aminos and mix for an additional 5 minutes
