Vegan recipes for the work week | fitness journey

In this video I make vegan recipes for the work week on my fitness journey. These vegan meals are easy, affordable, and satisfying.

Gluten free vegan blueberry muffins

Add 1 cup gluten free flour ( I bought mines from target.)
1 cup oat flour
1/4 cup coconut sugar
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
Next add wet ingredients into the bowl
1 cup + 2 TBS of unsweetened almond milk
1 TBS apple cider vinegar
3 TBS vegetebale or coconut oil
1/4 cup agave or pure maple syrup
Mix then add in 1 1/2 cup frozen or fresh blueberries
Bale at 350 for 22-30 mins/ I baked mines for 26
Let cool 1-2 hours before eating

Vegan red kidney beans(The Best vegan beans EVER!)

2 8oz cans of rinsed and drained red kidney beans (or you can use black any beans would be great with this recipe.)
Add beans to sauce pan. Now season with pepper & garlic powder and 2 packs of sazon seasoning. Then add 1 tsp of fresh minced garlic. Add 4 TBS of sofrito and 1 small can of salsa 7oz. Next dice 1 small yellow onion & add to pan. Cover with water mix it and let cook on medium heat for an hour. You can mash a few beans in the end if you want for that extra thickness. About half way through add more water if it starts to evaporate.
