Welcome to Meal Prep 101! Meal prep can be an intimidating subject, but have no fear! In this video, I show you how to meal prep for beginners, how to meal prep for weight loss, how to meal prep for muscle gain, and I share one of my favorite healthy meal prep recipes! This meal prep recipe makes 6 full meals, which is enough healthy meal prep for a week, and it’s super delicious and versatile.

Cilantro Lime Rice Nutrition Info :

✨ CROCK POT SALSA CHICKEN RECIPE ✨
Ingredients :
6 Boneless Skinless Chicken Thighs (695 grams)
2 jars salsa, separated (906 grams)
1 small yellow onion (144 grams)
1 medium bell pepper (128 grams)
2 cans black beans, drained (448 grams)
½ package frozen fire roasted corn (225 grams)
4 cloves crushed garlic (16 grams)

Instructions :
Trim excess fat from chicken thighs, and place in crock pot with one jar of salsa. Cover and cook on high for 6 hours.
When 2 hours remain on cooking time, add chopped onion, chopped bell pepper, garlic, corn, and black beans to crock pot. Stir to combine, cover with second jar of salsa, and cook for remaining 2 hours.

✨ CILANTRO LIME RICE ✨
Ingredients :
2 cups basmati rice (365 grams)
8 cups of water (a big pot full, but it doesn’t really matter how much water is in there, as long as it’s a ton)
2 small bay leaves
¼ cup cilantro
Juice from 1 lime
Salt to taste

Instructions :
Boil large pot of water with two bay leaves, and add rice. Cook for 12 minutes.
Drain rice in mesh strainer and rinse under hot water to remove excess starch. Put back in pot and mix in cilantro, lime juice (careful! Taste a little, add a little, until you’re happy with the taste. I used ⅔ of the juice from one lime) and a pinch of salt.
Stir to combine, and enjoy with salsa chicken.
