Hi Friends,

It is a task every day to think about what to make quickly in the morning for breakfast and then we end up having cornflakes or other cereals.

Well, we got you covered. This “cashew and tofu creamy sandwich spread” is not only healthy but very tasty and super quick to make. You can make it on weekends and can use it throughout the week. You can make a sandwich, wrap or salad and start your day on a healthy note.

Let’s see the detailed recipe:

What you need:

1 block (325 g) firm tofu, drained and gently pressed

3/4 cup (112.5 g) raw cashews. Soaked overnight

3 cloves garlic

4 Tbsp (60 ml) lemon juice (roughly 1 whole small lemon, or 1/2 large lemon)

Salt to taste

1/2 tsp black pepper

2 tbsp freshly chopped basil

1 tbsp freshly chopped mint leaves

1 tsp dried oregano

Directions

Using your hands, press the tofu over the sink to drain some of the water (if you like a thicker spread – more hummus texture – squeeze out more water).

Add to a high-speed blender – cashews, lemon juice, tofu, garlic, salt and pepper. Blend until smooth, stopping to scrape down the sides as needed.

Take out in a bowl and add all your herbs. Mix Mix Mix everything. Adjust your seasonings here according to your taste.

Once mixed, place the spread in the fridge for at least an hour to set.

Notes:

Storage: Refrigerate in an airtight container for up to 4 days.

Variations: you can try using raw, blanched almonds instead of cashews. Try adding paprika powder, dill leaves, or green onion for a different flavor.

Now spread it generously on your toasted bread and top it up with your favorite veggies – spinach, onion, tomato, capsicum and add more health and taste with some seeds on top.
