Vegan pumpkin spice latte recipe:

Pumpkin Spice Zucchini Overnight Oats
-1 cup finely chopped or shredded zucchini
-1/2 cup rolled oats
-1 scoop vanilla protein – I use 22 days nutrition, discount code is linked below
-2 tsp pumpkin pie spice
-1/2 cup pumpkin puree
-3/4 cup nondairy milk – I used oat milk
Mix all the ingredients in a bowl until totally combined, then soak in the fridge for at least 2 hours or overnight, then add toppings when you’re ready to eat

Pumpkin Spice Pancakes:

Pumpkin pasta
-3 oz pasta of choice – I used Cybeles orange fusili
-1/4 cup pumpkin puree
-1 tbsp unsweetened almond milk
-sprinkle of pumpkin pie spice
-nutritional yeast + hot sauce for topping
Cook the pasta according to the package directions, then mix in the pumpkin, almond milk, and pumpkin pie spice until thoroughly combined, then top with the nutritional yeast and hot sauce
