Hi! I’m Aja Dang and my boyfriend, Brian Puspos and I are cooking our favorite healthy, clean Asian dish – Poached Cod with Soba Noodles and Ponzu Sauce.
We are on an 8 week fitness challenge so we’ve been eating really healthy and clean, unfortunately sometimes that food tastes… like shit TBH. This dish is actually really easy to cook and has so much flavor, you’re not even gonna miss the gluten, wheat, dairy goodness.
This is perfect for meal prep bc you can make everything (but the fish) ahead and it holds over pretty well. We eat this for both lunch and dinner. ENJOY!

• INGREDIENTS •
SOBA NOODLES
1 8.8oz package of soba noodles
3 red radishes, thinly sliced
1/4 c julienned daikon radish
1 small carroet, julienned
1 tbsp sesame seeds
2 tbs sesame oil
cilantro
POACHING LIQUID
4 c water
2 tbsp sliced ginger
2 garlic cloves, minced
2 bay leaves
1 strip kelp
juice of one lemon
2 tbsp rice wine vinegar
PONZU SAUCE
1/2 c wheat-free tamari
2 tbsp rice wine vinegar
1/4 c water
1 1/2 tbsp lime juice
1 heaping tbsp freshly grated ginger
1 scallion, thinly sliced
