5 Easy & Creative Avocado Recipes | CHEAP CLEAN EATS

Today we get to cook with my fave…AVOCADOS!! Um, my mouth is already watering. Avocados are high in healthy fats and great for keeping you fuller longer! All the recipes today are SUPER simple to make and BONUS, they are 100% Vegan. Be sure to post any photos of your masterpieces with #cheapcleaneats so I can see what you make! Get creative! All of these recipes have wiggle room too!

#1 Avo Hummus Toast

INGREDIENTS:
1/4 Avocado
1 Ezekiel bread slice
1 TBSP Beet humus
1 slice Heirloom tomato
Pinch of Salt
Pinch of Pepper

DIRECTIONS:
Cut 1/4 of the avocado into small slices.
Toast your ezekiel bread.
Lather your toast with beet humus.
Slice up the heirloom tomato.
Add the avocado and tomato to your toast.
Add a pinch of salt and pepper

#2 Avocado Salsa

INGREDIENTS:
Small handful Cilantro
1 large tomato
1 Avocado
1 cup Roasted Corn
1 Lime
Pinch of Pepper
Tapatio to taste
Bag of Plantain chips

DIRECTIONS:
Chop up a handful of cilantro.
Cut the large tomato into slices.
Chop up one avocado.
Add the cilantro, tomato, and avocado into a bowl.
Add roasted corn to the bowl.
Season with lime juice.
Add in a few drops of Tapatio hot sauce.
Sprinkle some pepper.

#3. Happy Vegan Sandwich

INGREDIENTS:
A few slices of Red Onion
A few slices of Cucumber
A few thick slices of Avocado (Umm and yes I forgot to add them in the video OOPS)
1 thick slice of Heirloom Tomato
2 Ezekiel toast slices
2 TBSP Hummus
2 Butter lettuce leaves
Small bunch of Alfafa sprouts

DIRECTIONS:
Chop up 1/4 of a red onion.
Chop up 1/4 of a cucumber.
Slice 1/2 an avocado.
Slice your heirloom tomato.
Toast 2 pieces of ezekiel toast.
Add 2 tbsp of hummus to toast.
Add 2 pieces of butter lettuce.
Add a small bunch of alfalfa sprouts.
Layer the red onion, cucumber, and tomato on the toast.

#4. Avocado Fries

INGREDIENTS:
5 avocados
2 cups Non dairy milk
1 cup Garbanzo Flour
1 TBSP Garlic Powder
Salt and pepper
2 cups Coconut Flakes
Coconut Oil

Dipping sauce:
Small handful of Cilantro
4 TBSP Vegan mayo
Chipotle tabasco sauce to taste
Squeeze of lime to taste

DIRECTIONS:
Cut up 5 avocados in a chunky fashion.
Fill up a bowl with 2 cups of non dairy milk.
In a separate bowl, pour one cup of garbanzo flour.
Add 1 tbsp of garlic powder to garbanzo flour.
Add a pinch of salt and pepper.
Pour two cups of coconut flakes onto a plate.
Dip pieces of avocado into each batter and then cover in coconut flakes.
Spray coconut oil over everything.
Bake for 15-18 minutes at 420 degrees F.

Dipping sauce:
Chop up cilantro.
Add 4 tbsp of vegan mayo.
Add 1 tbsp Chipotle Tabasco sauce.
Add a squeeze of lime.

#5. “Fried” Avo Tacos

INGREDIENTS:
1/8 of a Red cabbage, sliced
1 corn tortilla
2 Avocado fries
1 TBSP Avocado fries sauce

DIRECTIONS:
Chop up 1/8 of red cabbage into small slivers.
Place it on corn tortilla.
Add in the avocado fries.
Top it with cilantro and a squeeze of lime.
Drizzle sauce from Avocado fries.
