WHAT I EAT IN A DAY || HEALTHY, EASY & BALANCED!

Hope you enjoy this quick and easy home edition what I eat in a day! In this full day of eating I didn’t have much time to make and prepare meals so all these recipes are super easy with simple ingredients!

Breakfast: avocado toast

Lunch: cod fillets with sweet potato wedges and salad

Dinner: Tortilla pizza, serves 1, makes 2
– 2 Tortilla wraps
– 4 tbsp ready made tomato sauce
– 2 tbsp Tomato puree
– 200g Chopped vegetables
– 3 rashers Bacon, chopped (optional)
– 50g Cheese (optional)

Put the grill on to high heat. Heat a pan and fry the vegetables for about 5 minutes, once softened, add the bacon and cook until there’s no more water in the pan and the bacon is cooked throughout. Place a tortilla on a baking tray, spread 2 tbsp tomato sauce and 1 tbsp tomato puree onto the tortilla. Place the chopped vegetables and bacon onto the tortilla and finish with cheese on top. Place on the grill for 3 minutes or until the edges of the tortilla go brown and the cheese has melted. Serve straight away (:
