RECIPES:

Avocado on Toast:

4 slices toast
1 medium avocado
Salt and pepper
Veg or protein of your choice

Put the bread in the toaster and meanwhile, cut up or mash a medium-large avocado. Spread it onto the toast and add whatever you like!! I used cucumber, tomatoes,egg and mushroom on mine (: Season and enjoy!!

Couscous and vegetable dish:

Couscous (dry)
Frozen peas (1 cup)
Roasted peppers x 2
Cherry tomatoes (handful)
150g per person of protein (I used prawns here)
Whatever else you’d like to add, all’s good here, just have a look round your cupboard (:

Boil the water. Then heat a non-stick frying pan. Choose whatever cooked protein you like and add it to the pan to heat up and brown. Pour in however much couscous you’d like to eat and add the water level with the couscous and cover until you need to serve. Add the remaining boiling water to the frozen peas to defrost them. Cut up any vegetables you have or like, after about 5 minutes the couscous will be cooked. Add everything into the bowl and top with your protein of choice! Easy peasy!!

Sweet potato, chickpea, chicken and feta salad:

1/s large sweet potato
1 can chickpeas
40g feta
1 small cooked beetroot
Honey (to taste)
Salt and pepper
Big handful of spinach leaves

Heat a pan to high heat, cut 1/2 a large sweet potato in small cubes and add to the hot pan, season and add 1/2 cup water and cover. Leave for 3mins or until the sweet potato is cooked and no water is left. Reduce the heat, drain a can of chickpeas and add them to the pan to heat through. Cut a precooked beetroot and about 40g feta into small chunks and add into a big mixing bowl with some spinach leaves. Add the sweet potato and chickpeas and mix. Serve with protein of your choice, a tsp honey and squeezed lemon. Bon appetit!!
