Healthy Asian Veggie Rice Recipe
– Approx 2 cups fresh or frozen veggies (peas, corn, carrots, broccoli, kale…)
– 1/2 onion (or 1 small onion)
– 2-3 cloves garlic
– 1 tbsp fresh grated ginger
– 2 cups cooked rice
– Tamari sauce
– Mixed greens
To garnish: Lime juice, avocado, sesame seeds
Directions:
– Fry onion, garlic and ginger (optional with coconut oil)
– Add in veggies + cooked rice
– Season with splash of tamari sauce, salt, pepper (all to taste)
– Serve over bed of fresh lettuce or mixed greens
