Healthy Slow Cooker Chicken Soup

In this video, I make a delicious slow cooker chicken soup that’s packed with tasty vegetables and pulled chicken. It’s the perfect soup for all year round.

As with any soup, there is a ton of side dishes that work well with this dish. For me, I found that a nice loaf of bread worked out perfectly. I love dipping the bread into the warm soup.

Unlike a lot of slow cooker recipes, this soup is relatively healthy. It has very little carbohydrate in it and is packed with a lot of hearty vegetables.

If you’re looking to add more vegetables, then you should try adding some sliced bell peppers. Even some zucchini will work great in the soup. Just keep in mind that some vegetables will cook really fast and will need to go in at the end of cooking.

A full list of ingredients is right below. I recommend keeping to the recipe but feel free to make some adjustments.

1kg (2.2 lb) chicken pieces
1 leek, chopped
2 tsp, garlic, crushed
2 celery stalks, sliced
2 carrots, sliced
2 bay leaves
½ tsp thyme
½ tsp rosemary
2l (2 qt) chicken stock
1 Tbsp. fresh parsley, roughly chopped

If you need this chicken soup fast then simply turn the slow cooker to high and reduce the cooking time to roughly 3-4 hours.

The leftovers are great for lunch or dinner as you can quickly reheat them in your microwave. Just make sure you store them in the fridge until you need them. They should last a couple of days in the fridge. Otherwise, the freezer will work well.
