Hi Guys!
Just wanted to share with you a couple of things I ate throughout my 100 day journey. Please note I am not a nutritionist and that I’m not a professional chef hehe , I just want to share what worked for me specifically.
When It comes to preparing my meal preps, I don’t precisely weigh my food, I just estimate my portions on how much I should be eating, but on the weekends when I don’t have meal prep and I eat at home with my family, thats when I weigh my food!
I’m pescatarian so I don’t eat pork, chicken or beef. But i do eat fish and seafood.
I prepared Salmon two ways : Lime salmon with Mango – Avocado salsa & Garlic Herb Baked Salmon,
LIME SALMON:
Salmon fillet:
3 Tbsp olive oil
1 whole lemon
3 cloves garlic
Salt and freshly ground black pepper
Please note * Oven baking time depends on your kind of oven ”
Avocado-Mango Salsa:
1 Tbsp fresh lime juice
1 large mango , peeled and diced
3/4 cup chopped bell pepper
1/4 cup chopped fresh cilantro
1/3 cup chopped red onion
1 large avocado , peeled and diced
1 Tbsp olive oil
Salt and pepper
GARLIC HERB SALMON:
salmon fillet
2 tablespoons olive oil
2 tablespoon lemon juice
3 cloves crushed garlic
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon black pepper
marinate for 15- 30 minute ( or longer if you like )
OVERNIGHT OATS:
– 45 g rolled oats
– milk of choice- almond milk, soy milk
– half a cup of any fruit you like
– 1 tbsp chia seeds
– 1 tbsp flax seeds
TWO INGREDIENT COOKIES:
Mash 2 LARGE bananas with a cup of oats,
add honey or agave syrup ( if you want it sweeter )
Add whatever you want ( raisins, choco chips, granola )
Bake in the oven for 9-12 minutes.
