Soba Noodle Stir Fry:
Vietnamese Spring Rolls:

Recipe serves 4*
Shrimp Marinade:
2 tbsp Soy Sauce
1 tbsp Honey
1 tbsp Olive Oil
1 tbsp Lime Juice
2 tsp Minced Ginger
3 cloves Minced Garlic
Mix together and toss in
1 lb Shrimp (deveined, peeled)
Marinate 15 minutes
1 Champagne Mango, peeled & sliced
1 Red Bell Pepper, thinly sliced
3 leaves Dino Kale, chopped
1 cup chooped Purple Cabbage
2 stalks Green Onions, chopped
1/2 cup chopped Cilantro
Salad Dressing:
1/4 cup Lime Juice
2 tbsp Soy Sauce
1 tbsp Honey
2 tsp Minced Ginger
1/4 tsp Sesame Oil
2 tbsp Olive Oil
Salt & Pepper to taste
Mix together
Boil 2 bundles soba noodles. Cook 4 minutes then drain and cool.
Fry shrimp in a cast iron pan with Olive Oil for 3 minutes, flip, and finish cooking 1 minute.
Toss the salad together saving the mangos for later so they don’t bruise.
Garnish the plate with more sliced Mango.
Coconut Mint Limeade:
Fresh Mint
Lime Juice
1 tbsp Simple Syrup
Ice
Coconut Water
Add 1 oz. Rum if you want to spike it!
