Ok so forget the other entrants to the Fitness Channel Cook Off.. my Kickin’ Cajun Chicken with Paprika Rice is where it’s at… from a bodybuilding meal that’s packed full of Protein and Nutrition point of view…
Ingredients (Serves 2):
260g Skinless Chicken Breast
40g Nando Hot Marinade (or whatever you can get)
120g Basmati Rice
Half Cup Chopped Red Onion
1 Sweet Red Pepper Chopped
200g Mexican Bean Mix
70g Petit Pois
30g Mozzarella
Cajun Spice Mix:
1 1/2 tsp Paprika
1 tsp Garlic Powder
1 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Cayenne Pepper
Pinch Bird Eye Chilli Flakes (or milder on preference)
1/2 tsp Oregano
1/2 tsp Thyme
1 tbsp Tomato Puree
Method:
1. Heat a little oil and add the chicken to the pan. Have your rice cooking steadily alongside, add paprika to the water to add colour and subtle flavour. The chicken should cook in 20 mins on medium heat.
2. When chicken is fully sealed and the onions, peppers and petit pois. Add a tbsp of Tomato Puree.
3. Halfway through add the mixed beans.
4. Just as coming to the end, add the cajun spice mix and a little water if it is looking dry.
5. Once cooked, plate up and sprinkle on the grated mozzarella (or whatever cheese you wish to use).
