➞ Ingredients (makes 6 servings):

▽ Filling
3 Tbsp Butter
½ Cup Onion – diced
½ Cup Celery – sliced
½ Cup Carrots – sliced
3 Cloves Garlic – minced
Salt and Pepper – to taste
12 oz Chicken – cubed small
¾ Cup Heavy Cream
½ Cup Chicken Broth
2 Tbsp Dijon Mustard
¾ Cup White Cheddar Cheese – shredded
½ Cup Frozen Peas

▽ Crust
1.5 Cups Mozzarella Cheese – shredded
3 Tbsp Cream Cheese
¾ Cup Almond Flour
1 Large Egg
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Italian Seasoning
1 tsp Sea Salt
½ Tsp Black Pepper

➞ Directions:

▽ Filling
1. Melt butter in a large skillet over medium heat. Once melted, add onion, celery, carrots, garlic and salt and pepper. Saute until vegetables are soft.
2. Add chicken to the same pan and saute until chicken is cooked.
3. Add chicken broth, heavy cream and dijon mustard and bring to a boil over medium-high heat. Reduce to low heat and simmer for 5-7 mins.
4. Stir in cheese until melted.
5. Mix in peas, remove from heat and set pan aside.

▽ Dough
1. Preheat oven to 375°F.
2. In a large, microwaveable mixing bowl, add the mozzarella and cream cheese. Microwave for 1min, Stir and microwave for another minute.
3. Mix in the remaining ingredients: almond flour, egg, garlic powder, onion powder, italian seasoning, salt and pepper until well combined. *If too stringy, stick back in the microwave for 30secs.
4. Divide the dough into 6 pieces (or however many servings you’re making) and flatten them into circles on some parchment paper.
5. Divide your filling between 6 mini pie pans or oven proof ramekins.
6. Top each ramekin with a piece of dough and fold down around the edges.
7. Bake 20-25 mins, or until golden brown
