EASY VEGAN RECIPES | Meals for leftovers

I know a lot of my Instagram followers are either vegan, or looking to incorporate more plant-based meals into their diet, so I thought I’d put together a vlog of some of my favourite easy-peasy meals for you!

Apple tart (3:14) –
4 apples
1 inch ginger
2 heaped tsp brown sugar (to taste)
1/2tsp cinnamon
Puff pastry

1. Preheat oven to 180 degrees
2. Wash the apples if necessary and set 2 aside
3. Cut the remaining 2 apples into 1cm square pieces (I don’t bother removing the peel)
4. Place the chopped apples in a saucepan with a dash of water. Add sugar, finely sliced ginger and cinnamon and simmer over medium heat.
5. Slice the remaining 2 apples as thinly as possible into roughly equal sizes
6. Once the saucepan apples are mostly mushy, take them off the heat
7. Cut the puff pastry to fit the tart dish, and spoon in the cooked apple mix. Level it out
8. Carefully arrange the thinly sliced apples over the top
9. Sprinkle with sugar if desired and place into the oven
10. Cook for 25-30 minutes until browning

Burrito (9:35) –
Seeded wraps
1 onion
Garlic
1 Aubergine
2 peppers (any colour)
Courgette
1 tin kidney beans
Handful tomatoes or canned tomato
Kale
Avocado
Vegan cheese

1. Fry up the onion and garlic until soft
2. Chop the aubergine and fry in a separate pan, turning half way
3. Add the peppers and courgette to the original pan until browning
4. Add the kidney beans, tomatoes and kale until the kale starts to wilt and go a deep green
5. Place on a low heat until all the aubergine is done
6. Heat up the wraps, mash the avocado and enjoy!

Stir-fry (13:28) –
Tofu
Cabbage
Sesame oil
2 peppers

1. Pat the tofu dry in between a couple of paper towels (optional: marinade)
2. Fry the cabbage and garlic together
3. Dice the pepper and add to the cabbage mix
4. Dice the tofu and add to another pan to fry
5. Dice and add any extra veg and ginger to the veg mix and cook until soft
6. Add the mushrooms last for a few minutes
7. Pour in a dash of soy sauce to the veg and also the tofu until bubbled away in the tofu pan
8. Serve up and enjoy!
