Today I’m sharing a few healthy breakfast recipes that are perfect to make for a brunch feast with you and your family and friends for a delicious sunday morning routine. I’m making crispy oven bacon, perfect scrambled eggs, gluten free fluffy pancakes, fruit salad and roasted cherry tomatoes.
CRISPY OVEN BACON
Lay out bacon strips on a parchment lined cookie sheet and bake in the oven preheated at 375F for 20 min, flipping half way.
GLUTEN FREE FLUFFY PANCAKES
(with 1/2 cup frozen wild blueberries)
ROASTED CHERRY TOMATOES
Heat up a large pan on medium heat with 1 tbsp of olive oil and toss in about 3 cups of cherry tomatoes. Season with a punch of chunky sea salt and black pepper and roast for 5-10 min while tossing.
PERFECT SCRAMBLED EGGS
In a large bowl mix together a dozen eggs with 1 cup unsweetened almond or soy milk and season with sea salt, black pepper and freshly chopped chives.
Heat up a large non stick pan on medium heat with 1/2 tbsp of grass fed butter, ghee or coconut oil.
Pour egg mixture into the pan to cook for 4-6 min until fluffy while scrapping the bottom and sides with a spatula to keep them fluffy and cook evenly on all sides.
FRUIT SALAD
In a medium sized bowl mix together 2 cups papaya chopped, 1 cup raspberries and 2 bananas.
