Carrot Lime Protein Bars | Vegan Fitness Recipe

Everybody loves Protein Bars and these carrot lime protein bars are the perfect mix for summer. Super refreshing, mosty and just delicious. I have tried lots of combinations of vegan protein bars but then I tried creating my own summer version and here they are 🙂 With over 20g of protein per bar, hardly any carbs and a modest amount of fat, these protein bars are the ideal snack. Enjoy 🙂

Ingredients:
1 cup flavorless vegan protein (I used soy protein)
¼ cup vanilla flavored protein (Optional, can be substituted by using vanilla extract)
2 medium sized carrots
4 tbsp coconut oil
â…“ cup shredded coconut
1 lime
1 tbsp apple mousse
½ tbsp Xylit or 1 tbsp agave juice/date syrup
½ tsp cinnamon
1 tbsp vanilla extract
Pinch of salt

Macros per serving (5 in total):
Protein: 23g
Carbs: 5g
Fat: 18g
Kcal: 278

Directions:
Grate the carrots
Combine all the ingredients in a bowl and mix to a dough
Press into a form (e.g. tupperware)
Leave in the fridge for min. 2 hours
Cut into bars
