BANANA OAT POWER PANCAKE
1/3 cup rolled oats
½ cup egg whites (4 egg whites)
1 tbsp natural peanut butter
1/4 tsp. baking soda
1 tsp maple syrup
¾ tsp cinnamon
¼ banana, quartered and sliced
Cooking spray
Combine all the ingredients in a blender and blend until you have pancake batter. Mix in banana pieces.
Coat an 8-inch skillet with coking spray and heat over a medium high heat. Pour the batter into the pan and cook for two minutes or until the pancake has set up and tiny bubbles are forming on the surface. Flip and cook for one more minute.
Serve with your favorite pancake toppings. Enjoy!
