Healthy Filipino Recipe for Chicken Afritada with Vegetables

What’s up y’all? I’m Drea, a personal trainer with a passion for food that’s healthy and satisfying. Today I’m showing you how to make a healthy Filipino recipe that I learned from my family. It’s for Chicken Afritada with Vegetables, a classic Pinoy dish that I’ve reimagined so I can enjoy my dinner while still hitting my macros. See below for the recipe.

Healthy Filipino Recipe for Chicken Afritada with Vegetables
Serves 4-5

Ingredients:

– 3 lbs of skinless chicken drumsticks or skinless chicken breast with rib
– 2 to 3 tbsp of olive oil or coconut oil
– ½ cup baby carrots or carrots cut in rounds
– 1 medium onion chopped
– 1 cup zucchini, quartered and then sliced thick
– 6 oz tomato paste
– 1cup chicken broth
– 1/3 cup soy sauce or coconut aminos
– 4 cloves of garlic chopped
– 2 bay leaves
– Optional: 4 to 5 red potatoes cut into quarters

Directions:

In a bowl mix the soy sauce and tomato paste together.

In a hot pot over medium high heat add 2 to 3 tbsp olive oil or coconut oil. (Pan must be hot first before adding oil.)

Then add chopped onions, and then chicken. Brown chicken on both sides, flipping once. Then add garlic and bay leaves and move around in pot for just a few seconds (you don’t want to burn the garlic or bay leaves). Add soy sauce and tomato paste mixture to pot and mix, coating chicken. Then add chicken broth.

Bring to boil. If you want to include the red potatoes, add them now to pot. Then cover pot and bring heat down to medium low. Simmer for 30 minutes, then add carrots and zucchini. Cover pot and let simmer for an additional 15 minutes. *Note, zucchini will cook faster than carrots so cut zucchini into bigger pieces.

Your healthy chicken afritada is ready to serve as is, with or without potatoes, or serve it over your favorite kind of rice. It depends on your macro goals whether you include potatoes and whether you choose to serve over rice. Both are traditional parts of the Filipino recipe for Chicken Afritada, but I will vary them if I’m concerned about making the dish healthier for weight loss or to hit my carbohydrate goals.
