~Protein Cake Recipe~
6 or 7 egg whites (room temperature and do not use liquid egg whites)
1 teaspoon lemon juice (I didn’t have cream of tarter so I substituted it for lemon juice)
stevia to taste
vanilla extract
17 grams protein powder (I used quest vanilla)
Directions:
1. Preheat oven to 350 degrees.
2. Make sure your eggs are at room temperature. To speed up the process, place them in a bowl of warm water for 10 minutes.
3.Separate egg whites, and place all ingredients (EXCEPT for whey) in a large mixing bowl.
3. Mix on highest speed with beaters for a few minutes until peaks begin forming.
4. Sprinkle whey on top. Fold in gently and carefully. Do NOT over mix or egg whites will lose fluffy texture and cake will not be spongy.
5. Spray a pan with cooking spray. I used an 8×8 square pan and then place in oven for 20 minutes. Let cool for a few minutes and top with whatever you want!
The cake has a fluffy, spongy consistency- definitely delicious. For just the plain cake… (1F/4C/38P) .
