Sushi burrito

Cut 1 sweet potato into fry shapes seaosn with sea salt, pepper, garlic powder, onion powder, and a little cayenne then add a little oil. Bake at 425 for 20 mins.

Next cut half block super firm tofu ( I get from trader joes) cut into strips season with pepper, garlic powder, umami seasoning ( which i salo got from trader joes ) a little coconut aminos then coat in panko bread crumbs. Put in air fryer for 10 mins at 390 or in oven at 425 until crispy.
Assemble nori sheet with jasmine rice or brown jasmine rice, basmati rice ( any sticky kind of rice) then add veggies of your choice. I added spinach, shredded carrots, avocado sweet potatoes, tofu and then drizzle some teriyaki sauce on top. Roll into a burrito and cut. I ate this with some sriracha mayo. )(I didn’t measure it but here is my estimation)2 TBS vegan mayo 2 tsp sririacha, 1/4 tsp garlic powder, 1/8 tsp black pepper, 1 tsp lemon juice. Enjoy:)

Chickpea cakes

saute peppers & onions add salt, pepper, 1 tsp minced garlic.
add half cup chickpea flour to bowl & 2/3 cup water season with 1/2 tsp black salt or sea slat, 1/4 tsp black pepper, 1/4 tsp garlic powder, 2 TBS nutritional yeast. Mix then fold in peppers & onions cook on medium heat until golden brown flip and cook on other side.

Spinach & mushrooms

Add salt & pepper to sliced mushrooms and sautee in pan then add a handful of spinach.

Vegan chocolate peanut butter ice cream

Add 3 frozen bananas to food processor or high speed blender & 1 1/2 TBS coco powder, 1 tsp vanilla extract & drop of unsweetened almond milk if too hard. Let bananas sit out for about 10 mins before blending. Makes it easier. Add nice cream to bowl and mix in 3 tsp creamy peanut butter and top with your favorite toppings. I used vegan chocolate chips (trader joes) and crushed walnuts.

Vegan creamy penne pasta

Saute peppers and onions in skillet add in mushrooms if you wish season with salt & pepper. Create space in the middle and add in vegan sausage, (optional) I use field roast chipotle and sometimes siple truth chorizo sausage. You can also cook this seperatley and add in at the end. Next add in 1/2 cup coconut milk and 1 cup unsweetend almond milk. Season with salt, pepper, garlic powder, umami seasoning ( optional:trader joes) 1 tsp minced garlic , 2 TBS nutritional yeast. Cover and let simmer for 20 mins. Then add in penne pasta of your choice. I used whole wheat.
