Idngrientents:
1 tablespoon coconut oil
1 pound of shrimp
1 pound baby Dutch yellow potatoes
4 cloves garlic, minced
4 ounces of broccoli
1 bunch of asparagus
1 pound medium shrimp, peeled and deveined
1 (12.8-ounce) package smoked andouille sausage, thinly sliced
1 lemon
2 tablespoons basil
2 tablespoons thyme
Instructions:
Chop potatoes, sausage, broccoli, asparagus and garlic.
Add coconut oil to a pan and heat.
Then, add chopped potatoes, basil, thyme, salt and pepper to the pan, stir well. Cook for about
a 5-6 minutes or until potatoes start to get soft. Set aside.
Add chopped sausage to sheet pan with parchment paper. Add shrimp, broccoli, asparagus and
garlic to the baking sheet.
Then, add potatoes and mix well.
Sprinkle with salt and pepper and lemon juice and mix again.
Bake for 20-25 minutes or until shrimp is opaque and potatoes are soft.
Enjoy on a higher carb day!
*Note, this makes a big batch and is great to share of to save for later!
