Ninja Foodi Chicken Rice Recipe:
1 tbsp of olive oil
1/2 cup of red bell pepper
1/2 cup of yellow onions
1 garlic clove
1/4 cup of culantro (seed leaves)
4 chicken legs with skin
after 4 mins turn the chicken over
1 teaspoon of regular salt
1/4 teaspoon of achiote (annatto)
mix with a 1/2 cup of water
give it 2 minutes boiling and set your pressure cooker to 10 mins on high pressure
take your chicken out, get rid of the skin, shred the chicken and remove the bones
put the shredded chicken back into the pressure cooker
add 1/2 cup of celery
1 cup of rice
1/2 cup of spanish olives
1/4 cup of capers
close your pressure cooker and set it back to 7 mins on high pressure
