chickpea-sweet potato salad recipe for weight loss, dinner/lunch salad recipe to lose weight fast, skinny recipes for weight loss. cooking in cast iron pan helps in iron absorption more. As my skillet is seasoned well, it just needed a little oil to saute the ingredients and roast the chickpeas without sticking to the pan plus I could serve a healthy salad for dinner. I used boiled chickpeas which I had pressure cooked but if you are using canned chickpeas then make sure you wash them before cooking. I have added an Indian touch to this salad by using Indian spices. Sweet potatoes are good carbs that will help you feel fuller but you can use cooked quinoa, bajra, barley, jowar etc instead. You can use any variety of capsicum.
NOTE: Iron deficiency is the most the most common nutritional deficiency. your thyroid needs adequate iron levels to produce active hormones T4 and T3. Symptoms of low iron can include fatigue, low energy, hair loss, feeling cold, weak or brittle nails, palpitations or shortness of breath, brain fog and more. Many of these symptoms are also symptoms of low thyroid function or hypothyroidism.
So, other than eating more iron-rich foods, another good way to increase iron intake is to cook foods in a cast iron pan or kadai.

cooked/boiled chickpeas: 2 cups
boiled sweet potatoes: 1/2 cup, chopped
1 tsp coconut oil
1/4 tsp jeera/cumin seeds
4 cloves garlic, chopped
1/4 inch ginger, chopped
1/2 onion, chopped
1 tsp Kashmiri chilli powder
1/2 tsp turmeric powder
1/4 tsp roasted cumin powder
1/4 tsp garam masala (link below)
2 chopped tomatoes
1-2 tbsp water
1/2 tsp pink Himalayan salt
1/4 tsp black pepper powder
1/2 red capsicum, chopped
1/2 green capsicum, chopped
A sprinkle of chat masala
lettuce leaves as needed
spring onion, chopped as needed
coriander leaves, chopped as needed
