Breakfast Smoothie – 5 portions
Hamilton Beach Single Serve Blender with Travel Lid:
Ziploc Bags:
1 handful spinach (about 1.5 cups) |
1/3 cup cucumber |
1/2 cup Great Value Frozen Sliced Strawberry & Banana |
1/2 cup Great Value Frozen Mango Chunks |
1.5 tbsp Yoso Coconut Yogurt |
3/4 cup Silk Unsweetened Original Almond Milk |
1/4 cup water
Lunch – 5 portions
Lemon & Garlic Baked Chicken Breast + Roasted Sweet Potato & Broccoli
Oven at 425F. Roast veggies for 30-35 min & Chicken for 25-30 min at 375F
5 boneless skinless chicken breasts | (it’s available in my local Walmart, but here is another option online from the same Halal brand)
1/2 lemon (Zest & Juice) |
1 tbsp Great Value Garlic Powder |
1 tsp Great Value Dried Oregano |
2-3 Sweet potatoes |
Pre-packaged broccoli |
Sprinkle of Tajin (check the international aisle with the Mexican foods!)
Salt & pepper to taste
Dinner – 2 Portions, but can also be made into 4 depending on how much you want (Option 1)
Oven at 400F. Bake Salmon & Brussel sprouts for 25-30 mins.
Honey-glazed Salmon, brown rice & roasted brussel sprouts
Hamilton Beach rice cook:
2 Salmon filets |
1 cup cooked Great Value Long Grain Brown Rice |
Pre-packaged brussel sprouts |
Glaze
1 tbsp Great Value Honey |
1 tsp Sesame Oil |
2 tbsp Hoisin Sauce |
1 tbsp Soy Sauce |
1/2 lemon (juice only) |
1 tbsp Great Value Garlic powder |
Squeeze of Sriracha Sauce |
Salt & pepper to taste
Dinner – 3 portions…mine made about 4 though (Option 2)
Creamy Coconut & Pineapple Cashew Tofu over brown rice with steamed veggies
1 Extra-firm Tofu pack |
1.5 cups Great Value Long Grain Brown Rice |
Patak’s Goan Pineapple Cooking Sauce |
Sriracha sauce (optional) |
Tajin | (find in the international aisle at Walmart)
2.5 cups (or more) Silk Unsweetened Original Almond Milk |
1/4 cup cashews (got it in the bulk section in my local Walmart)
1/2 lemon (juice) |
Pre-packaged broccoli, carrots & green bean mingle (got it at my local Walmart)
Salt & pepper to taste
