Ingredients to make Chinese Fried Rice:
Chicken … 300g
Rice … 500g
Carrot (Julienne Cut) … 1/2 Cup
Capsicum (Julienne Cut) … 1/2 Cup
Cabbage (Chopped) … 2/3 Cup
Garlic Paste … 1/2 Tsp
Egg … 1
Black Pepper … 1 Tsp
Salt … 2 Tsp
White Vinegar (Synthetic) … 1/2 Tbsp
Soy Sauce … 1 Tbsp
Cooking Oil … 4 – 5 Tbsp
Water (For boiling Rice) … 3 liter approx
Method for making Fried Rice:
Step 1: Boil Rice
– Rinse and soak rice for 30 minutes.
– Take water (about 3 litre) and bring it to boil.
– Add 1 Tsp of salt into boiling water.
– Add 1 – 2 Tbsp of cooking oil.
– Remove water from soaked rice and add it into boiling water.
– Add 1/2 Tbsp white synthetic vinegar.
– Cook rice on medium to high flame until 100% done.
– Drain the water from rice and set it aside.
STEP 2: Fry boiled rice with chicken and vegetables
– Take 2 Tbsp cooking oil in a wok/pan
– Add chicken pieces,
– Add 1/2 Tsp garlic paste.
– Add salt 1 Tsp (Or according to taste)
– Add 1 Tsp black pepper
– Stir fry for 1 minute.
– Cover with lid and cook for 5 minutes on low heat so chicken becomes soft.
– Remove the lid after 5 minutes.
– Add carrots and saute for 1 minute.
– Add capsicum and saute for 1 minute.
– Add cabbage and saute for 1 minute.
– Break 1 egg in a bowl, add a pinch of salt and black pepper into it and mix it.
– Move chicken and vegetables to 1 side of pan.
– Add 1 Tbsp of cooking oil on other side of pan.
– Add egg into it, scramble it and mix it with chicken and vegetable.
– Add boiled rice.
– Mix boiled rice well with chicken and vegetables and cook for 2 minutes on medium flame.
– Fried Rice is ready.
– Serve it hot.
