RECIPE
Brandon’s Chicken Cauliflower Fried Rice
Prep time: 10 minutes
Cook time: 15 minutes
Servings: 5
INGREDIENTS
3 tbsp Sports Research Keto C8
1 bunch scallions, chopped with light and dark green separated
4 large eggs, whisked together
3 cups cooked shredded chicken, both dark and white meat
5 cups cauliflower rice, cooked and cooled
3 tbsp tamari
1/4 cup Sriracha mayo
METHOD
Heat Sports Research Keto C8 on a large skillet or wok over medium heat. Add the light greens of the scallions and saute until softened. Slide the scallions to the side of the skillet. Pour the eggs to the other side of the skillet and scramble with a spatula. Mix the eggs and onions together. Add chicken, cauliflower rice and soy sauce to the skillet and fry until heated through. Add green scallions. Divide into 5 portions. Top with a swirl of sriracha mayo.
