MUSHROOM CHICKEN RECIPE (ONE PAN HEALTHY CHICKEN RECIPE)

Mushroom chicken recipe, One pan healthy chicken recipe – Today I will show you how to cook mushroom chicken which is very easy and quick to prepare yet very delicious with a coating of a delicious sauce.

The ingredients for Mushroom Chicken Recipe :
1. 350 gms/0.77 pound- boneless , skinless, chicken thighs cut into bite size pieces (refer to my chicken 65 recipe for how to cut the chicken. Link given below )
2. Soy sauce- 1 tablespoon
3. Vinegar – 1/2 teaspoon
4. Oil – 1 teaspoon ( any oil)
5. Grated ginger – 1 teaspoon
6. Sugar – 1 teaspoon
7. Cornstarch/ cornflour- 1 teaspoon
Marinate the chicken mixing all the above ingredients for 15 minutes.
For the sauce –
1. 3/4th cup water regular room temperature water
2. Light soy sauce – 1 tablespoon
3. Dark soy sauce – 1 tablespoon. If you do not have dark soy sauce then add another tablespoon of light sauce.
4. Sugar – 1 tablespoon
5. Chili sauce- 1 teaspoon ( can add more if you like it spicy)
6. Tomato ketchup – 1 tablespoon
7. Cornstarch/cornflour- 2 teaspoons.
Mix the above ingredients very well to a smooth consistency sauce.
For cooking-
1. Oil – 3 tablespoons
2. Ginger chopped- 1 tablespoon
3. Garlic chopped – 2 tablespoons
4. Onion – 1 large
5. Green onions – 2 chopped
6. Mushroom – 16 oz / 450 gm approx
7. Salt – 1/2 teaspoon
8. Ground black pepper – 1/2 teaspoon
9. Green Chili (optional) – 1
Method :
1. Marinate chicken
2. Fry chicken for a minute on high heat in a single layer and then fry for 3 to 4 minutes.
3. Add 1/4th cup water, cover on medium for 8 minutes
4. Add salt and pepper and take it off heat
5. Heat oil in that same pan on high heat
6. Add chopped ginger
7. Add chopped garlic
8. Add the white parts of green onion
9. Add the chopped mushrooms
10. Stir on high heat till water evaporates.
11. Cover on medium heat for 5 minutes.
12. Uncover, add salt, pepper
13. Add chopped green chili
14. Add the chicken and the green parts of the green onions
15. Add the sauce and let it come up to a vigorous boil on high heat
16. Give a final stir and immediately take it off heat.
17. Garnish with cilantro and serve with steamed rice, noodles.
