Instant rice dosa is a very easy and simple recipe. It is known as Ghavane in Maharashtra. It is similar to neer dosa. We will make it healthier by adding veggies in it. You can keep the batter ready a night before and store it in freeze if you are in a hurry in the morning. This can be a good lunch box option for kids or a nice evening snack too.
Ingredients:
• 1 cup Rice flour
• 1 tbsp Wheat flour
• Salt to taste
• Ginger-Green chili paste
• Water
• 1/2 tsp Lemon juice
• 1 tbsp shredded Carrot
• 1 tbsp finely chopped Spinach
• Oil
Method:
• In a bowl take rice flour.
• Add wheat flour, salt, ginger-green chili paste and mix well.
• You can decide the quantity if the ginger-green chili paste
according to your taste. You may skip it too.
• Add water and make flowing batter.
• The consistency of the batter should be flowing and not thick like
regular dosa batter.
• Add lemon juice, shredded carrot, spinach and mix well.
• Heat up a pan on medium heat.
• When the pan is enough hot spread a little oil over it.
• Start spreading the batter along the edges first and end up at the
center.
• Cover and cook for about a minute.
• After about a minute remove the lid and spread some oil along
the edges.
• You can use ghee in place of oil.
• When the dosa begins to leaves the edges flip it over and cook for
about 1-2 minutes from other side as well.
• Instant rice dosa is all ready.
Tips:
• Whenever you are using iron rice ingredient like beet root or
spinach combine it with lemon juice or curd. Sourness helps in
absorbing iron well into our body.
• The pan should be hot enough. If the pan is too hot then the dosa
gets cooked quickly and sticks to the pan.
